Gluten Free Soul Food

Do you know much about Gluten-Free food?

Gluten is the protein part of wheat, rye, barley, and other related grains. Some people cannot tolerate gluten when it comes in contact with the small intestine. This condition is known as celiac disease (sometimes called non-tropical sprue or gluten sensitive enteropathy). A  simple blood test can give the physician the first
clue to this disease.

Gluten injures the lining of the small intestine. This injury can result in weight loss, bloating, diarrhea, gas, abdominal cramps, and/or vitamin and mineral deficiencies. When patients totally eliminate gluten from the diet, the lining of the intestine has a chance to heal.

If you find yourself faced with this issue you know finding great recipes is hard to find. Take a moment and try my Glutten-Free Soul Food Chicken:
3 lbs of chicken cut into 8-10 pieces or drumsticks/ thighs
Crushed sea salt and freshly ground pepper
2 tbsp paprika
2 tbsp garlic powder
2 tbsp onion powder
1 tsp cayenne pepper
1 tsp season salt
3 large eggs
7 cups of Gluten free flour
1 tbsp Xanthan Gum (to give stability to the batter)
vegetable oil for frying
paper bag

Mix together all the spices. Divide into 3 equal portions and sprinkle one portion over the chicken pieces. Make sure each piece of chicken is coated with seasoning. Whisk the eggs in a bowl. Add one-third of the seasoning and beat to incorperate thoroughly. Mix the remaining third of the seasoning with the flour. Add Xanthan Gum and stir well. Heat the oil in a large frying pan. Dip each piece of chicken into the egg, then dip it into the seasoned flour (best still, place the seasoned flour into a sturdy paper bag, place chicken pieces in two at a time and shake to cover).Fry the chicken in batches in the hot oil for 6-8 minutes or until each piece is well cooked and golden.

  3. Ive never used Xanthan Gum but I have used the GF flour to fry chicken, & chops. How can I reheat to get that same fresh out the skillet taste?
